Why Use Fresh Milled Flour?

Which Wheat Berries Should I Grind?

For recipes such as muffins and pancakes, I recommend milled soft white wheat berries for a lighter and moist texture. This muffin recipe also works wonderfully with hard white wheat berries, but I would not use hard red wheat because it will make the muffins dense.

Grain Mill

Muffin Pan

Muffin pans, silicone molds, or whatever your preference, this is a must! Make sure you grease it really well.

Base Recipe For Fresh Milled Flour Muffins

Fresh Milled Flour Muffins (Base Recipe)

Fresh Milled Flour Muffins

Simple and satisfying freshly milled flour muffins that are wholesome, moist, and a perfect base to highlight the goodness of whole grains.

Cook Time 17 minutes
Total Time 22 minutes

Ingredients

  • 2 1⁄4 (270 g) cups freshly ground flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 (240g) cup milk
  • 1 egg
  • ½ cup (110g) avocado oil, coconut oil, or cooled melted butter
  • ½ cup (160 g) honey
  • optional mix-ins

Instructions

  1. Measure dry ingredients into a mixing bowl.
  2. If adding mix-ins, fold into dry ingredients to coat, this prevents the strawberry from sinking in the muffin tin.
  3. Whisk together liquids, then mix with dry ingredients just until well blended.
  4. Drop by spoonfuls into greased muffin tins.
  5. Bake at 350° for 17-20 minutes.

Notes

What kind of wheat berries should I grind?

Soft white wheat berries would yield a fluffier, more tender muffin. Hard white wheat will also work well. I do not recommend hard red wheat berries. Mill your wheat berries on the fine setting and do not sift.

Storing and Freezing Instructions

Store in an airtight container in the fridge for up to 4 days. Alternatively, you can freeze in a freezer-safe container for up to 3 months. Thaw to room temperature and rewarm in oven or microwave to enjoy.
